Oven baked sausages with vegetable and tomato sauce

This beautiful one-pot dish is baked in a thick vegetable and tomato sauce to produce a warming and satisfying family meal. Try our delicious recipe!

Ingredients

  • Frylight Cooking Spray
  • 8 pork sausages
  • 1 onion, thinly sliced
  • 1 clove garlic, minced
  • 400 g can chopped tomatoes 
  • 150ml white wine 
  • 150ml beef stock 
  • 250g new potatoes, halved 
  • 1 red pepper, seeded, sliced
  • 1 courgette, halved lengthwise, sliced
  • 12 cherry tomatoes
  • 2 carrots, sliced          
  • 1 tsp dried oregano

Directions

  1. Preheat oven to 180 °C
  2. Spray a large frying pan with Frylight to cover the surface. Put on a medium heat and wait until Frylight is clear. Brown the sausages for 7-10 minutes, turning, until evenly browned. Transfer to a 20cm x 30cm shallow, ovenproof dish.
  3. Using the same pan, add a few more sprays of Frylight then fry the onion and garlic for 5 minutes until starting to soften. Add all remaining ingredients and season to taste. Bring to boil and pour over the sausages.
  4. Cover dish with foil and bake for 35 minutes.
